After completing my City & Guilds in 1994 at "Rannie's" I worked for Elite Hotels as a pastry chef before having a complete change of direction to the emergency services. I missed the creativity of cheffing so set up my cake business which I run alongside my "day" job as a police radio operator.
I particularly love flowers and really enjoy creating lifelike blooms in sugar. I am a keen photographer and the majority of my photography expeditions involve macro photography of flowers and foliage. My love of flowers means that I love to incorporate large sugar blooms into my cake designs and my style heavily features floral themes with delicate feminine details.
As a pastry chef it's very important to me that your cake not only looks stunning but tastes delicious too with my own contemporary take on the traditional fruit cake and an homage to the French pastry god Pierre Herme.
In 2010 I grew my own apprentice who has followed in my footsteps, loving anything cake related and she is very often found helping me make decorations !
